Another fat fighting recipe...Southern Egg Salad!
October 5th, 2011Creative but simple, tasty and most importantly good for you!!! This salad is perfect for lunch and makes 2 servings...
Ingredients:
4 whole eggs, hard boiled
1 tablespoon Greek yoghurt, (natural)
1 tablespoon low fat mayonaise
1/4 spanish onion, diced into small pieces
1/2 teaspoon chilli powder
1/2 clove garlic, crushed
1 teaspoon of apple cider vinegar (use red wine vinegar as an option)
2 cups mixed salad leaves (cos & iceberg lettuce reccommended)
Method:
Boil eggs until hard. Cool and peel.
Carefully slice eggs in half and remove yolks with a teaspoon to set aside in a mixing bowl. Mix the yolks, yoghurt, mayonaise, onion, chilli, garlic and vinegar together until smooth and creamy. Add sea salt/pepper to taste.
Place lettuce leaves on plate, arrange egg whites on lettuce and pour yolk mixture on top. Enjoy!!
Fat fighting recipe # 3: Healthy CousCous Salad
September 27th, 2011This quick and easy couscous salad is so tasty on its own or you can add grilled chicken to make a complete balanced meal. Perfect for Summer!
Ingredients:
250grams dry, uncooked couscous
2 tablespoons coldpressed extra virgin olive oil
1 clove of garlic, crushed
1/2 punnet cherry tomatoes, cut into halves
1 cup roughly chopped mint
1 cup roughly chopped flat leaf parsley
3 spring onions, sliced
juice of 1/2 lemon
Sea salt & pepper to taste.
Method:
Place couscous in a heatproof bowl and pour boiling water over it to cover.
Cover bowl and set aside for 5 minutes.
Then uncover and add the oil and garlic using a fork to mix through.
Allow couscous mixture to cool before adding the tomatoes, mint, parsley, spring onions, lemon juice and salt/pepper. Serve straight away or refigerate until ready to serve.

Fat Fighting Recipe # 2 ...
September 21st, 2011Apple Oat Pancakes...
Who doesn't like a good pancake? Well did you realise they can also be good for you!!!
This recipe makes approx 4 - 6 pancakes (depending on the size).
Ingredients:
6 egg whites
1/2 cup rolled oats (uncooked)
1 tablespoon of apple sauce
1 teaspoon of raw sugar
1 apple (finely diced)
1/4 teaspoon of cinnamon
1/4 teaspoon of baking soda
cooking spray
Method:
Blend all the ingredients in a blender (EXCEPT FOR THE DICED APPLE).
Heat a nonstick fry pan until HOT then reduce the heat to MEDIUM. Spray pan with a small amount of cooking spray.
Spoon mixture into the pan.
When bubbles form, place some of the diced apple onto the pancake and allow to set before flipping over and cooking for a further 2 - 3 minutes.
Serving suggestion: Enjoy with a tablespoon of organic yoghurt & a handful of berries.
Fat Fighting Recipe.... Pepper & Paprika Prawns
September 13th, 2011This tasty recipe couldn't get much simpler. It makes 2 servings...
400g green banana prawns (shelled)
1 tablespoon of coconut or macadamia oil
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
2 cloves garlic (crushed)
In a fry pan over medium-high heat add oil and saute the prawns and garlic for approx 5 mins, until prawns are pink. Sprinkle the paprika and cayenne pepper over and cook for another minute then serve.
Serve with one bunch of broccolini (steamed) and 1/3 cup of brown rice (steamed/boiled), for a perfectly balanced dinner.
